At Brittlebush Bar & Grill, the menu defines the mixture between native Arizona favorites and the unique Scottish-inspired dishes of its Gastropub menu. Located at the Kierland Golf Club, the Scottish-influenced cuisine connects to the Scottish heritage of the Kierland golf experience. The culinary efforts of Chef Graeme Blair, a Scotland native and Arizona resident, boast some of his homeland favorites and family recipes with a modern Arizona twist. The menu has been created with sustainability in mind by using local Arizona ingredients and flavors. Gastropub is a British term for a public house, better known as a “pub,” which specializes in high-quality food, a step above the more basic “pub grub.” Brittlebush Bar & Grill is one of the several ways The Westin Kierland Resort honors its Scottish heritage.
The Westin Kierland Resort & Spa partnered with the Arizona State Historian, Marshall Trimble from the very beginning to preserve the rich Arizona history and share its Scottish heritage. Guests will find themselves emerged in Scottish traditions through the Resort’s “Scottish Pipes at Sunset Series,” “Saturday Night Scotch Tastings,” the “Scottish Golf Experience,” Scottish-themed wedding ceremony package, Bagpiper mascot and even a Resort dog, “Scotty” the Scottish Terrier.
