Montelucia Resort & Spa’s signature Four Diamond restaurant, Prado, offers contemporary seasonal cuisine authentically prepared in the time-honored traditions of the Mediterranean. The freshest seafood, meats and produce are cooked on a grill over a large and rustic open wood-fired oven. Chefs preparing tapas and other grilled items on a large dark-wood table directly in front of the fire, create visual interest and a feeling of casual warmth. Led by Chef de Cuisine Peter DeRuvo, Prado is committed to using the freshest locally-grown and seasonal ingredients, dressed simply to allow the quality to shine through. Prado offers an extensive wine selection, showcasing a diverse variety of boutique labels from around the world. The restaurant’s architectural character is strongly reminiscent of Europe, with exposed beams, weathered plaster walls, iron chandeliers, antiqued mirrors, aged leather, and wood. The elegant ambiance is inspired by the architectural design of the Villa San Michele restaurant, originally designed by Michelangelo in Tuscany, Italy.
